This year, we are proud to once again offer the SL28 varietal harvested during a recent solar eclipse, earning the name Black Moon Process. Once harvested, the coffee cherries rest in the shade for three days in specially designed boxes, then they are de-pulped, removing the coffee seeds to be washed before they complete a 48-hour fermentation in water.
